• 1 Lime
• 1 tbsp mint
• 2 small cucumbers
• 1 watermelon chopped up to small cubes

• 1 extra large cucumber, or two small cucumbers
• 1/2 large red onion
• 2 (15 oz) cans chickpeas, drained and rinsed
• 1/3 cup chopped fresh herbs, pick your favorite!
• 1/2 cup sunflower seeds or pepitas
Dressing:
• 1/3 cup olive oil
• 1/4 cup red wine vinegar
• Juice of one lemon
• 1 tablespoon sauce
• 2 cloves garlic, minced
• 1 teaspoon dijon mustard
• Salt and pepper, to taste
Chinese Chicken Salad
Looking for a less traditional salad for your party, this simple salad with an Asian twist is perfect. The sweet from the oranges compliments the spice from the ginger, and the savory from the green onions. You can of course add and remove any ingredients you don’t want, but we don’t recommend skipping the wonton noodles for that fun little crunch. The chicken can also be switched for shrimp for a substitution as well.

Black Bean Salsa Recipe
Calling all cilantro lovers! This is less of a salad and more of a salsa, but honestly it is so good that it could easily be eaten alone or on top of a Mexican chopped salad as well, or on top of burrito bowls for an additional colorful side.
